The baking process takes place in the induced horizontal circulation of hot air (see diagram), the products (the batch) are placed on trays on a standard trolley. The circulation of air occurs in a closed cycle and is enforced with a centrifugal fan located inside the baking chamber above each trolley and revolving guide vanes located in side ducts on both sides of the chamber. Flaps enforce the horizontal air circulation facilitating uniform baking on the trays. Maximum temperature, which air may reach in the chamber, is 250°C. Baking chambers are equipped with a microprocessor controller to facilitate the programming of technological processes and their control in the automatic cycle (“manual” control is also possible). The course of the baking process may be controlled visually by the chamber operator through a window (inspection opening) in the oven doors. The inside of the chamber may be illuminated. The baking chamber is equipped with the system of automatic washing. The application of the heating system patented by our company ensures that the baking processes in the baking chamber are ecologically clean and safe for the natural environment, while the products are of the highest quality. |
